Leprechaun Kisses are a great way to use up those leftover egg whites.  Make these fat- and gluten-free cookies and sandwich them together with a bit of melted white chocolate for a de-lite-fully minty taste of spring.

Sometimes you just have to have a coconut cream pie - and this one can be made gluten free!  Substitute Cup4Cup flour for the flour in the pastry cream and use a gluten free pie crust.  Deeply-flavored brown sugar adds even more richness to the pastry cream.
